Makes 6 to 8
3-1/2 c. zucchini, grated
3 T. onion, grated
2 T. fresh parsley, minced
1/3 c. grated Parmesan cheese
1 c. soft bread crumbs
1 t. salt
1/2 t. pepper
2 eggs, beaten
3/4 c. dry bread crumbs
1/2 c. butter, melted
Wrap zucchini in paper towels; press out as much liquid as possible. Combine zucchini, onion, parsley, cheese, soft bread crumbs, salt, pepper and eggs. Shape into patties; dip into dry bread crumbs. Place on greased baking sheets; drizzle with butter. Bake at 350 degrees for 30 to 40 minutes, until golden.
Zucchini and other summer squash make tasty side dishes and are easily swapped out in recipes. Try substituting old-fashioned yellow crookneck or pattypan squash for zucchini in any favorite recipe.
