MAKES 1¾ CUPS, V, GF
Most simple syrups are made with refined white sugar. I suggest using organic maple syrup instead. (It has a lower content of fructose and some trace minerals.) Use grade A for clear drinks and the more rustic grade B for darker drinks. As with all sweeteners, use sparingly.
¾ cup grade A maple syrup
Combine the maple syrup with 1 cup of water in a saucepan over medium heat. Bring to a boil, then turn off heat and allow to cool. Transfer to a lidded jar and refrigerate until needed. It will keep for up to 10 days.
