Fried garlic & garlic oil
- 1 bulb of garlic
- about 250ml groundnut oil
- a pinch of sea salt
- Peel the garlic and chop roughly. Do the same as for the shallots, above, but do note that garlic burns a lot quicker. Remove from the heat once you smell that wonderful garlicky aroma and let them sizzle in the residual heat until golden (not brown).
