Fried ginger & ginger oil
- a small knob of ginger (about 80g)
- about 250ml groundnut oil
- 2 teaspoons sesame oil
- Peel the ginger, then smash it so it falls apart into fibrous threads. Julienne into thin slices. Do the same as for the shallots, above, and remove from the heat once golden, letting them sizzle in the residual heat until golden brown.
