Smoke Beef Brisket

Ingredients
- 12 pounds whole brisket
- 2 tablespoon freshly ground pepper
- 1 tablespoon garlic powder
- 2 tablespoon salt
Directions
- Place the brisket; trim off the additional silver skin & fat.
- Combine garlic powder with pepper and salt; mix well and then, season the meat with the prepared spice mix.
- Let marinate for overnight in a refrigerator.
- Preheat your smoker to 225 F & place the brisket inside.
- Smoke until a meat thermometer reflects 165 F, for 6 to 8 hours.
- Wrap the brisket in a large butcher paper or foil paper and place it into the smoker again; cook until the thermometer reflects 195 F, for 6 more hours.
- Remove the brisket from smoker & let rest for an hour, before serving.
- You may enjoy the brisket slices with grilled salad.
