Chapter 3 Lamb Recipes
Smoked Lamb Chops (Lollipops)

Cooking Time: 50 minutes
Servings: 4 persons
Ingredients
- 2 tablespoons sage
- 1 rack of lamb or 8 bones
- 2 tablespoons rosemary
- ½ teaspoons pepper, coarse
- 2 large garlic cloves, chopped
- ¼ cup olive oil
- 2 tablespoons thyme
- 1 tablespoon honey
- 2 tablespoons shallots, chopped
- ½ teaspoon salt
Directions
- Preheat your smoker to 225 F using apple wood or any of your favorite fruit wood.
- Remove the extra fat or silver skin from the lamb.
- Prepare herb paste by combining the ingredients in a food processor. Apply this paste generously to the lamb and let rest for a day.
- Place the rack of marinated lamb in the preheated smoker and cook for an hour. Remove & prepare your grill or smoker for direct cooking.
- Grill the lamb on direct heat for 2 minutes per side for crust. Once done, let rest for 5 minutes before slicing and making lollipop; serve hot & enjoy.
