Smoked Lamb Chops (Lollipops)

  1. Preheat your smoker to 225 F using apple wood or any of your favorite fruit wood.
  2. Remove the extra fat or silver skin from the lamb.
  3. Prepare herb paste by combining the ingredients in a food processor. Apply this paste generously to the lamb and let rest for a day.
  4. Place the rack of marinated lamb in the preheated smoker and cook for an hour. Remove & prepare your grill or smoker for direct cooking.
  5. Grill the lamb on direct heat for 2 minutes per side for crust. Once done, let rest for 5 minutes before slicing and making lollipop; serve hot & enjoy.
