Ingredients:

1 tablespoon lime juice, freshly squeezed

1/4 teaspoon pepper, freshly cracked

1/4 teaspoon salt

1 teaspoon ground cinnamon

3 pounds parsnips, whole, peeled

1 teaspoon ground turmeric

1/2 teaspoon ground coriander

3 cloves garlic, minced

Dill/parsley, fresh

Olive oil, extra virgin
Directions:
Set the oven at 400 degrees Fahrenheit to preheat.
Spread out the parsnips on a greased baking sheet so they form a single layer. Toss with the olive oil (3 tablespoons), minced garlic, salt, pepper, and spices.
Place in the oven to bake for about forty to forty-five minutes or until caramelized and tenderly cooked.
Serve garnished with fresh parsley/dill.
