Goat Cheese and Walnut Salad
A nutty and tangy salad with goat cheese and walnuts.

Ingredients:

2 oz. beet

3 oz. arugula
-
2 oz. bibb lettuce

9 oz. romaine lettuce

1/4 cup, dry breadcrumbs

1/4 tablespoon dried thyme
-
1/4 tablespoon dried basil
-
1/3 teaspoon black pepper
-
6.35 oz. fresh goat’s milk cheese, preferably in log shape
-
oz walnut pieces
-
fl oz. red wine vinaigrette
Directions:
Trim, wash, and dry all the salad greens.
Tear the greens into small pieces. Toss well.
Mix the herbs, pepper, and crumbs.
Slice the cheese into 1 oz. pieces. In the seasoned crumbs mix, roll the pieces of cheese to coat them
Place the cheese on a sheet pan. Bake at the temperate of 425 F for 10 minutes.
At the same time, toast walnuts in a dry sauté pan or the oven with the cheese.
Toss greens with vinaigrette & put on plates.
Top 2 pieces of cheese &sprinkle with walnuts.
