Makes 2 dozen
2 c. all-purpose flour
2/3 c. sugar
2 T. baking powder
1-1/2 t. salt
1/2 c. shortening
2 c. sweet potatoes, cooked, peeled and mashed
1/4 c. buttermilk
Sift flour, sugar, baking powder and salt together; cut in shortening. Mix in potatoes and buttermilk; turn out onto a lightly floured board. Knead lightly; roll out 1/2-inch thick. Cut with a biscuit cutter; arrange on greased baking sheets. Bake at 475 degrees for 12 to 15 minutes.
Add a yummy touch to homemade biscuits...brush each with butter, then sprinkle with dried parsley or rosemary before baking.
