Makes about 12 cups
12 c. popped popcorn
Optional: 1-1/2 c. peanuts
1 c. brown sugar, packed
1/2 c. butter
1/4 c. light corn syrup
1/2 t. salt
1/2 t. baking soda
Place popcorn in a large brown paper bag; add peanuts, if using, and set aside. Combine brown sugar, butter, corn syrup and salt in a microwave-safe 2-quart glass bowl. Microwave on high setting for 3 to 4 minutes, stirring after each minute, until mixture comes to a boil. Microwave for 2 additional minutes without stirring. Stir in baking soda. Pour mixture over popcorn; close bag and shake well. Microwave in bag for 1-1/2 minutes. Shake bag well and pour into a roaster pan; cool and stir.
Whip up a big bowl of homemade caramel corn...terrific for snacking on during a favorite movie.
