Makes 6 servings
1-1/2 c. sugar
2 T. butter, melted
1 egg
1 c. milk
2 c. all-purpose flour
2 t. baking powder
1/4 t. salt
1 c. brown sugar, packed
1/4 c. butter, chilled and diced
1-1/2 t. cinnamon
Place sugar, melted butter, egg and milk in a large mixing bowl; beat with an electric mixer on medium speed for 2 minutes. Stir in flour, baking powder and salt. Spread in a greased 8"x8" baking pan. Sprinkle with brown sugar; dot with diced butter and sprinkle with cinnamon. Bake at 425 degrees for about 35 minutes, until a toothpick inserted in center comes out clean. Cool 10 minutes; cut into squares. Serve warm.
