Tom Kha Gai (Chicken and Coconut Soup)

Tom Kha Gai appears to be a dairy-based soup but in reality, coconut milk gives Tom Kha Gai its look and texture. The broth is made with fresh chicken stock, coconut milk, lime juice and possibly fish sauce. Slices of chicken breast, fresh mushrooms, bamboo shoots, lemon grass and galangal root provide the bulk of the soup. It is usually garnished with a kaffir lime leaf or coriander leaf (cilantro) and sliced Thai chili peppers. It may also be garnished with crushed peanuts or tree nuts. This soup is moderately spicy, but you can most likely have it made mild because Thai soups are almost always made to order.

Tom Yum Groong (Spicy Shrimp Soup)

Tom Yum Groong is similar to hot and sour soup found in Chinese restaurants. Shrimp, straw mushrooms, lemon grass, galangal root, Thai chili peppers, coriander and garlic are simmered in fresh chicken broth with lime juice and a touch of fish sauce. Tom Yum Groong is usually garnished with a kaffir lime leaf or coriander leaf and sliced Thai chili peppers. It may also be garnished with crushed peanuts or tree nuts. This soup can be very spicy, but since Thai soups are usually made to order, you will likely have the opportunity to request it mild, if you prefer.
