Gai Yang (Thai Barbeque Chicken)
Gai Yang can be prepared in many different ways, due to the fact that there are hundreds of recipes for the marinade. The most common style is usually some variation of the following recipe. Half a chicken is marinated in a combination of coconut milk, rice vinegar and fish sauce for two to twenty-four hours. It is seasoned with cilantro, curry powder, garlic, palm sugar, chili pepper and turmeric. The chicken is then removed from the marinade and cooked on the grill. The garnish for this dish is usually basil or coriander leaf. The most common dipping sauces provided are a sweet chili dipping sauce made with fish sauce, vinegar, palm sugar, garlic and chili pepper; or a garlic and rice vinegar sauce with sliced chili peppers and shallots.
