Fruit ’n’ nut granola

This fruity, crunchy granola will power you well into the day. It’s perfect served with yoghurt and berries. Top your 35g serving of granola with full-fat live Greek yoghurt (75g/100cals) and a handful of mixed berries (30g/11cals) for a breakfast bowl of 287cals.

COOK TIP

You can also serve the granola with around 75ml full-fat milk per 45g portion for 252cals. Adjust calories if using non-dairy milk.

  1. 1. Preheat the oven to 180°C/fan 160°C/Gas 4.
  2. 2. Melt the coconut oil in a large saucepan over a gentle heat, add the cinnamon and stir.
  3. 3. Remove from the heat and stir in the oats until thoroughly mixed. Scatter evenly over a large baking tray and bake for 15 minutes.
  4. 4. Remove the tray from the oven and add the nuts and seeds. Return to the oven for a further 10 minutes, or until lightly toasted.
  5. 5. Remove from the oven and leave to cool and crisp up on the tray. Stir in the figs and cranberries and store in an airtight jar for up to 2 weeks.
