Fruit ’n’ nut granola

This fruity, crunchy granola will power you well into the day. It’s perfect served with yoghurt and berries. Top your 35g serving of granola with full-fat live Greek yoghurt (75g/100cals) and a handful of mixed berries (30g/11cals) for a breakfast bowl of 287cals.
- 30g coconut oil
- 1 tsp ground cinnamon
- 150g jumbo porridge oats
- 50g plain mixed nuts, roughly chopped
- 25g mixed seeds
- 2 dried figs (around 35g), roughly chopped
- 25g dried cranberries
COOK TIP
You can also serve the granola with around 75ml full-fat milk per 45g portion for 252cals. Adjust calories if using non-dairy milk.
- 1. Preheat the oven to 180°C/fan 160°C/Gas 4.
- 2. Melt the coconut oil in a large saucepan over a gentle heat, add the cinnamon and stir.
- 3. Remove from the heat and stir in the oats until thoroughly mixed. Scatter evenly over a large baking tray and bake for 15 minutes.
- 4. Remove the tray from the oven and add the nuts and seeds. Return to the oven for a further 10 minutes, or until lightly toasted.
- 5. Remove from the oven and leave to cool and crisp up on the tray. Stir in the figs and cranberries and store in an airtight jar for up to 2 weeks.
