Lamb burgers

SERVES 4 | PREP 10 mins | COOK 10 mins

These lamb burgers couldn’t be simpler and make a great alternative to beef.

COOK’S TIPS

For a little extra spice, add ¼ teaspoon ground cinnamon to the burger mix.

  1. 1. Place all the ingredients in a bowl, season with lots of ground black pepper and combine thoroughly with your hands.
  2. 2. Divide the mixture into 4 balls and flatten into burgers, each around 12cm wide. Make them a little flatter than you think they should be, as they will shrink as they cook.
  3. 3. Place a large non-stick frying pan over a medium heat, add the burgers and cook for about 10 minutes, or until lightly browned and cooked through, turning once or twice. Press the burgers every now and then with a spatula so they cook evenly.
  4. 4. Serve with a large mixed salad and some tzatziki (see page 91) for an extra 61cals per portion.
