Lamb burgers

These lamb burgers couldn’t be simpler and make a great alternative to beef.
- 500g minced lamb (20% fat or less)
- 6 spring onions, trimmed and very finely sliced
- 1 garlic clove, peeled and finely grated
- 1 medium zucchini (around 175g), trimmed and finely grated
- ½ tsp dried mint
- ½ tsp flaked sea salt
COOK’S TIPS
For a little extra spice, add ¼ teaspoon ground cinnamon to the burger mix.
- 1. Place all the ingredients in a bowl, season with lots of ground black pepper and combine thoroughly with your hands.
- 2. Divide the mixture into 4 balls and flatten into burgers, each around 12cm wide. Make them a little flatter than you think they should be, as they will shrink as they cook.
- 3. Place a large non-stick frying pan over a medium heat, add the burgers and cook for about 10 minutes, or until lightly browned and cooked through, turning once or twice. Press the burgers every now and then with a spatula so they cook evenly.
- 4. Serve with a large mixed salad and some tzatziki (see page 91) for an extra 61cals per portion.
