Cauliflower mash

  1. 1. Half fill a medium pan with water and bring to the boil. Add the cauliflower and return to the boil. Cook for 15–20 minutes or until very soft.
  2. 2. Drain, then return to the pan. Add the oil, a pinch of salt and lots of ground black pepper. Blitz with a stick blender, or cool slightly and blend in a food processor until smooth. (You can also mash vigorously with a potato masher.)
