Cauliflower mash

SERVES 1
- ½ small cauliflower (around 200g), trimmed, broken into small florets and stalk thinly sliced
- 1 tsp olive oil
- 1. Half fill a medium pan with water and bring to the boil. Add the cauliflower and return to the boil. Cook for 15–20 minutes or until very soft.
- 2. Drain, then return to the pan. Add the oil, a pinch of salt and lots of ground black pepper. Blitz with a stick blender, or cool slightly and blend in a food processor until smooth. (You can also mash vigorously with a potato masher.)
