Baked cabbage

Roasted cabbage tastes quite different to steamed. It has a sweet and slightly nutty, caramelised flavour. This makes a very simple main meal accompaniment, or you could scatter diced pancetta over the cabbage for the last 10 minutes of the cooking time and top with grated Parmesan just before serving – don’t forget to add the extra calories.
- 1 tbsp olive oil, plus extra for greasing
- ½ medium Savoy cabbage (around 350g)
- lemon juice or soy sauce, to serve (optional)
- 1. Preheat the oven to 200°C/fan 180°C/Gas 6 and lightly grease a baking tray.
- 2. Cut the cabbage in half to make two large wedges, then place on the baking tray, cut side up. Drizzle with the oil, season with a little salt and lots of ground black pepper and bake for 15–20 minutes, or until just tender and browned in places.
- 3. Remove from the oven, sprinkle over a little lemon juice or soy sauce, if using, and serve straight away.
