Crushed berry layer dessert

A gloriously creamy berry dessert scattered with toasted almonds. Deceptively simple. Use a good-quality full-fat live Greek yoghurt. On non-fast days, you could use half crème fraîche and half yoghurt, to make it even creamier.
- 400g mixed berries, such as strawberries (hulled), blackberries, raspberries and blueberries
- 1 tbsp chia seeds
- 400g full-fat Greek yoghurt
- 1 tsp vanilla extract
- 2 tbsp flaked almonds, toasted (around 15g)
COOK’S TIPS
If you are not eating these straight away, cover and keep in the fridge. Top with the flaked almonds just before serving. Eat within a couple of days.
- 1. Tip the berries into a bowl, keeping some back for decoration. Mash lightly, then stir in the chia seeds and leave to stand for 20 minutes.
- 2. Combine the yoghurt and vanilla extract in a separate small bowl.
- 3. Layer the fruit and yoghurt into four glass tumblers. Decorate with the reserved fruit and top with flaked almonds.
