Spiced apple crisp
SERVES 4 | PREP 10 mins | COOK 5 mins
A comforting crumble-style dessert, which also tastes good served cold. It contains no added sugar – the sweetness comes from the sultanas. If you don’t have sultanas, use raisins or chopped dates instead.
- 3–4 cooking apples, peeled, quartered, cored and cut into 2–3cm chunks (around 400g prepared weight)
- 60g sultanas
- ½ tsp ground cinnamon
For the topping
- 20g butter
- 40g flaked almonds
- 40g jumbo porridge oats
COOK’S TIPS
This is delicious served with full-fat Greek yoghurt or full-fat crème fraîche (see page 239 for calories).
- 1. Place the apples, sultanas and cinnamon in a large saucepan. Add 100ml cold water, cover and cook over a medium heat for 5–6 minutes, or until the apples are soft but some chunks are just holding their shape, stirring occasionally.
- 2. Meanwhile, place the butter, almonds and oats in a non-stick frying pan and toast over a medium heat for 3–4 minutes, stirring regularly until lightly browned.
- 3. Divide the spiced apple between four dishes, sprinkle with the almond and oat mixture and serve.
