Spicy nuts

If you’re not a fan of nuts, these will surely convert you. The trouble is they are very more-ish! You could scatter them on a salad or a curry for extra crunch and flavour. Nuts have substantial health benefits. Michael is a particular fan of Brazil nuts, as they are so high in the mineral selenium, which most of us are lacking. Selenium bolsters your immune system and thyroid function, as well as reducing inflammation and improving heart health.
- 120g mixed nuts, such as Brazil nuts, cashews, hazelnuts and walnuts, any larger nuts roughly chopped
- 2 tsp canola or melted coconut oil
- 1 tsp medium curry powder
- ½ tsp crushed dried chilli flakes
- ½ tsp flaked sea salt
- 1. Preheat the oven to 180°C/fan 160°C/Gas 4.
- 2. Place the nuts in a medium bowl. Add the remaining ingredients and lots of ground black pepper. Toss everything together until the nuts are lightly coated. Scatter over the baking tray and roast for 5 minutes.
- 3. Remove from the oven and turn the nuts. Roast for a further 5 minutes, or until the nuts are lightly browned. Take care they don’t burn.
- 4. Cool for a few minutes on the tray to allow to crisp a little, then transfer to a bowl. Serve slightly warm or leave to cool completely.
