Honey Mustard Salmon

Jazz up a piece of grilled salmon with tangy yet sweet Honey Dijon mustard.

Vegetable oil, for the grates

4 4- to 6-ounce boneless salmon fillets

2 tablespoons olive oil

Kosher salt and freshly ground black pepper

1/2 cup Honey Dijon mustard

a8 Preheat a clean grill to medium-high with the lid closed for 8 to 10 minutes. Lightly brush the grates with oil.

a8 Brush the salmon with the olive oil. Season with the salt and pepper to taste.

a8 Place salmon on the grill, flesh side down. Close the lid and cook for about 3 to 4 minutes. Turn the salmon over and brush with the mustard. Cook for 3 to 5 more minutes, for medium. Serve immediately.

Serves 4.

a2 Cooking Tips: The secret to grilling salmon (or any fish) is to let a good crust form on the outside before you try to flip it. If you try to flip it before it is ready, the flesh will tear and fall apart.

There are many great brands of Honey Dijon mustard available. One of my favorites is made by French’s®. If you don’t have a bottle on hand, you can make your own by combining equal parts honey and Dijon mustard.
