I love salads. And not surprisingly, I have written a cookbook on them as well as designed two restaurant concepts based on this dish.
Simply Salads was inspired by my favorite lunchtime dish. As I developed recipes for that book, I experienced firsthand that the possibilities are infinite when it comes to the different salad creations you can make. It’s fun to experiment with flavors.
Cheffie’s Café is my newest restaurant venture. I designed a concept and a menu around fresh salads and sandwiches. At Cheffie’s Café, we invite our guests to “Be the Chef.” From our long list of top-quality meats, fresh produce, tasty cheeses, and delicious toppings, guests can design their own salad or sandwich creation. We want our guests to have fun composing their personal salads.
Salads take very little time to prepare and are impossible to mess up. You can make a salad with just about any food. It’s as simple as tossing together a handful of fresh, flavorful ingredients. There really are no rules.
Depending on what you decide to toss together, salads can either be tasty sides or satisfying entrées. I have included both options in this chapter. A grill can add a delicious, smoky flavor to just about everything. From corn and summer squashes to romaine lettuce and potatoes!
