Grilled Lime Sweet Potatoes

I am a big fan of sweet potatoes, and this is one of my favorite ways to enjoy them. The lime makes them the perfect accompaniment for a Mexican- or Caribbean-inspired meal.

Vegetable oil, for the grill screen

2 medium sweet potatoes (about 1 1/2 pounds), peeled and sliced into rounds about 1/4-inch thick

2 tablespoons olive oil

Kosher salt and freshly ground black pepper

1 tablespoon lime zest

2 tablespoons freshly squeezed lime juice

a8 Preheat a clean grill with a grill screen to medium with the lid closed for 8 to 10 minutes. Lightly brush the grill screen with oil.

a8 Place the sweet potatoes and the olive oil in a large bowl. Toss until well coated. Season with the salt and pepper to taste.

a8 Place the potatoes on the grill screen. Close the lid and cook, turning once, until tender and golden brown, 7 to 8 minutes total. Place in a serving bowl and toss with the lime zest and juice. Serve warm.

Serves 4.

a2 Cooking Tips: If you don’t have a grill screen, you can line the grill with aluminum foil to prevent the potatoes from falling through the grates.

a4 Variation: Lime doesn’t go with your main course? Then just omit it, and you’ll have simply delicious grilled sweet potatoes.
