Grilled Lime Scallions

These scallions are a great addition to almost any grilled dish. Serve them on burgers or as a side for a grilled steak or chicken breast. My friend Ashley Woodman deserves all the credit for the secret ingredient in this recipeā€”a squeeze of lime!

Vegetable oil, for the grates

1 bunch scallions (about 12), trimmed

1 tablespoon olive oil

2 tablespoons freshly squeezed lime juice

a8 Preheat a clean grill to medium with the lid closed for 8 to 10 minutes. Lightly brush the grates with oil.

a8 Lightly brush the scallions with the olive oil.

a8 Place the scallions on the grill. Close the lid and cook, turning once or twice, until tender, 3 to 4 minutes total.

a8 Place the scallions on a platter and drizzle with the lime juice.

Serves 4.

a2 Cooking Tip: Scallions are also known as spring onions or green onions. To trim, remove and discard the root ends.
