Grilled Figs with Honey Mascarpone
Fresh figs are nothing like those super-sweet cookies we all grew up with. Only available in the summer, these scrumptious fruits are best when simply prepared.
1 cup mascarpone
1 tablespoon honey, plus extra for garnish
1/2 teaspoon vanilla extract
Vegetable oil, for the grates
8 fresh figs, cut in half lengthwise
2 tablespoons canola oil
1/4 cup finely chopped hazelnuts, optional garnish
In a small bowl whisk together the mascarpone, honey, and vanilla. Cover and refrigerate until ready to serve.
Preheat a clean grill to medium-high with the lid closed for 8 to 10 minutes. Lightly brush the grates with oil.
Lightly brush the figs with the canola oil. Place the figs on the grill, cut-side down. Close the grill and cook, turning once, until lightly golden brown, 2 to 3 minutes per side.
To serve, place the figs on a plate. Garnish with a generous spoonful of the mascarpone. Drizzle with honey and chopped hazelnuts if desired.
Serves 4.
Cooking Tip: Look for firm, yet ripe, figs. Softer figs could quickly turn mushy when cooked. Enjoy this dish while figs are in season, since dried figs will not work on the grill.
