These biscuits were Clark Gable’s favorite. They were served at his fortieth birthday party, which was catered by the Brown Derby.
Makes 24 biscuits
4 cups all-purpose flour
1 tsp. cream of tartar
1 tsp. baking powder
½ tsp. baking soda
pinch sea salt
¼ cup vegetable shortening
1 cup raisins
1 cup sour cream
1 cup whole milk
1. Preheat the oven to 450°F. Line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, cream of tartar, baking powder, baking soda, and salt. Using a pastry blender, incorporate the shortening until well-blended. Add the raisins, sour cream, and milk. Add more flour or milk until the mixture forms a soft dough.
3. Turn the dough out onto a floured surface, pat it into a round, and roll it out evenly. Cut with a 2-inch biscuit cutter. Place close together on the prepared baking sheet and bake until golden brown, about 12 to 15 minutes.
4. Serve hot with butter.
