Fillet of Sea Bass

To change up the flavor of this dish, you can also try squeezing lemon or lime over the fish. Sea bass is an easy fish to overcook, so watch the pan carefully.

Serves 4

¼ cup canola oil

1 lb. sea bass fillets

salt

freshly ground black pepper

⅓ cup all-purpose flour

2 tbsp. butter

juice from ½ medium lemon

lemon slices

1. Heat the oil in a frying pan over medium heat.

2. While the oil is heating, dry the fillets between paper towels and sprinkle with salt and pepper. Dredge through the flour, shaking off excess. Place the fillets in the heated oil and cook until light brown on both sides (about 4 minutes on each side) or until fish begins to flake.

3. Keeping the fish in the pan, pour off the excess oil from the pan. Add butter and cook until golden in color. Add lemon juice. Remove from heat and place on a platter.

4. Pour the hot butter over the fish and garnish with lemon slices.
