These light-as-air puffs were one of the most popular items on the Bullocks Wilshire Tea Room menu.
Makes 8 popovers
6 large eggs
2 cups whole milk
2 cups all-purpose flour
¾ tsp. sea salt
6 tbsp. unsalted butter, softened
1. In a large bowl, whisk eggs and milk together. Set aside.
2. In another bowl, combine flour, salt, and butter until blended well. Add into egg/milk mixture, blending well.
3. Prepare 8 custard cups by coating the inside with butter. Divide mixture evenly among the cups and place cups on a baking sheet. Place in preheated 400°F oven and bake until golden brown, about 22 minutes.
