Cream Cheese Icing

Makes about 3 cups

3 cups powdered sugar

6 oz. cream cheese, softened

5 tbsp. unsalted butter, softened

1 tsp. freshly squeezed lemon juice

1. Using a mixer with a paddle attachment, blend the sugar, cream cheese, butter, and lemon juice. Whip at a higher speed to make fluffy. Refrigerate until needed.
