This salad was created for and named after the Chasen’s matriarch, Maude Chasen.
Serves 6
Salad:
8 cups shredded iceberg, romaine, and
chicory lettuces
4 large plum tomatoes, seeded and diced
4 large hard-boiled eggs, diced
2 bunches chives, chopped
Dressing:
1 cup mayonnaise
¾ cup sour cream
2 cloves garlic, minced
½ cup chili sauce
¼ cup red wine vinegar
10 oz. Roquefort cheese, crumbled
sea salt
freshly ground black pepper
1. In a large salad bowl, combine lettuces, tomatoes, eggs, and chives and toss. Chill.
2. To make the dressing, whisk mayonnaise, sour cream, garlic, chili sauce, and vinegar in a large bowl until well-blended. Stir in Roquefort cheese. Season with salt and pepper. Use desired amount to coat salad well. Sprinkle with Roquefort cheese.
