Originally created by Chef Auguste Escoffier and served at the Carlton Hotel in London as Strawberries Americaine Style, this dessert was “borrowed” by Mike Romanoff, who renamed it after himself. It became the signature dessert at Romanoff’s.
Serves 4
2 cups strawberries, rinsed, hulled, and halved
1 tbsp. granulated sugar
2 tsp. orange liqueur
1 tsp. orange zest
1 tbsp. freshly squeezed orange juice
whipped cream
1. In a bowl, combine the strawberries, sugar, liqueur, zest, and orange juice. Let marinate for 2 hours at room temperature. Divide evenly among stemmed glassware.
2. Dollop the whipped cream on top and serve immediately.
