Virginia Baked Ham with Cherry Sauce

Out of the few main dishes served at the Palladium, this was the most popular option.

Serves 12 to 16

7 lbs. fully cooked, spiral Virginia ham on the bone

8 cloves garlic

4 oz. mango chutney

¼ cup Dijon mustard

½ cup packed light brown sugar

1 medium orange, zest and juice

Cherry Sauce (recipe follows)

1. Preheat the oven to 350°F. Place the ham in a roasting pan and set aside.

2. In food processor fitted with a metal blade, process the garlic, chutney, mustard, sugar, and orange zest and juice until smooth.

3. Spread the mixture on the ham. Bake for sixty minutes, or until the glaze is golden brown. Serve with Cherry Sauce.
