This quiche was a favorite on Ma Maison’s lunch menu.
Serves 6
14-inch prepared pastry pie dough, rolled out
8 oz. applewood-smoked bacon, cooked and diced
6 oz. cooked ham, diced
¼ cup fresh chives, chopped
½ cup Gruyère cheese, grated
3 cups half-and-half or heavy cream
7 large eggs
½ tsp. white pepper
¼ tsp. ground nutmeg
¼ tsp. salt
1. Preheat the oven to 350°F. Line a 10-inch quiche pan with the pastry dough.
2. Bake the crust until light brown, about 12 minutes. Set aside.
3. Sprinkle the bacon, ham, chives, and cheese on top of the pastry.
4. In a bowl, whisk together the half-and-half, eggs, white pepper, nutmeg, and salt. Pour on top of the bacon mixture. Bake until puffy and browned, about 30 to 40 minutes. Serve hot with a side salad.
