Ma Maison served this salad on a bed of greens or homemade bread.
Serves 4
3 lbs. roasting chicken, cooked and deboned
1 medium Golden Delicious apple, peeled, cored, and diced
1 stalk celery, diced
1 tbsp. capers
2 tbsp. Dijon mustard
½ cup mayonnaise
salt
freshly ground black pepper
freshly squeezed lemon juice
2 small heads Boston lettuce, washed and torn
vinaigrette dressing
2 large hard-boiled eggs, sliced
2 medium tomatoes, sliced
1. In a large bowl, combine the chicken, apple, celery, capers, and mustard. Add enough mayonnaise to lightly coat. Add salt, pepper, and lemon juice to taste.
2. Season the lettuce with the vinaigrette and place in the center of a serving platter. Top with the salad and garnish with the eggs and tomatoes.
