Mocha Smoothie with Almond Butter

Enjoy your coffee in a new way, blended in a delicious smoothie without any added sugar whatsoever. This morning beverage is perfectly balanced with protein and healthy fat from the almond butter and plenty of antioxidant-rich compounds that support all five defense systems.
1 cup brewed coffee, chilled in the refrigerator
1 frozen medium banana, peeled
1 cup unsweetened soy milk
1 cup ice
½ tablespoon unsweetened cacao powder or unsweetened cocoa powder
1 tablespoon almond butter
1 teaspoon vanilla extract
Bioactive ingredients: coffee, soy milk, cacao, almond butter
In a blender, combine the coffee, banana, soy milk, ice, cacao powder, almond butter, and vanilla. Blend for 30 to 60 seconds, or until smooth. Store in the refrigerator for up to 48 hours, then add 2 or 3 new ice cubes, blend again, and enjoy when you’re ready.

VARIATION: If you like your smoothies sweeter, adjust the amount of banana to suit your preference. You can also add more cacao or cocoa, if desired, for added antioxidants and chocolate flavor. You can use other types of nondairy milk, but you will lose some of the health benefits of the soy milk.
