Sourdough Avocado Toast with Hempseed

Avocado toast is packed full of fiber and healthy fat from everyone’s favorite savory fruit. You can boost the health benefits even more by pairing it with gut-supporting homemade (here ) or store-bought sourdough bread and topping it with hempseed for both protein and anti-inflammatory omega-3 fatty acids.
2 large sourdough bread slices
1 medium ripe avocado
¼ teaspoon salt
2 teaspoons freshly squeezed lemon juice
1 tablespoon hempseed
½ cup watercress
Bioactive ingredients: sourdough bread, avocado, lemon, hempseed
1. Toast the bread in the toaster for 2 to 3 minutes. Transfer to a plate.
2. While the bread is toasting, cut the avocado in half, and remove the pit. Using a spoon, scoop the flesh out into a small mixing bowl.
3. Add the salt and lemon juice. Using a fork, mash together until well combined.
4. Spread the avocado mixture evenly onto each slice of toast.
5. Sprinkle with the hempseed, and top with the watercress.

VARIATION: If you don’t have hempseed, any other type of small nut or seed can be substituted in the same amount. Consider chia, pine nuts, chopped pumpkin seeds, or sesame seeds for different flavors and health benefits. You could replace the watercress with the same amount of arugula or chopped spinach if desired.
