Cinnamon-Pecan Baked Apples

Baked apples are a year-round dessert that is simple to prepare and makes your house smell warm and delicious. Consider serving these with vanilla yogurt for a protein-packed breakfast, snack, or dessert.
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅛ teaspoon ground nutmeg
⅛ teaspoon ground cloves
½ cup chopped pecans
¼ cup rolled oats
1 tablespoon maple syrup
1 tablespoon butter or nondairy butter, cut into small pieces
2 medium apples
½ cup water
Bioactive ingredients: cinnamon, ginger, pecan, oats, apple
1. Preheat the oven to 375°F.
2. In a small mixing bowl, mix together the cinnamon, ginger, nutmeg, and cloves.
3. Add the pecans, oats, and maple syrup. Stir to coat the pecans evenly. Add the butter, and toss to coat.
4. Using a paring knife, remove the core of the apples, leaving about ¼ inch at the bottom to hold the filling. Carve the opening about an inch wide so there’s plenty of room for the filling.
5. Scoop the pecan filling into each of the apples.
6. Arrange the apples in an 8-by-8-inch glass baking dish. Pour the water into the bottom of the dish to protect the apples from burning.
7. Transfer the baking dish to the oven, and bake for 40 to 50 minutes, or until the apples are soft. Remove from the oven.
