4 peaches or nectarines, pitted

3 tablespoons orange juice

12 ounces soft silken tofu, drained (about 1 1/3 cups)

2 tablespoons maple syrup

1/3 cup walnut pieces, coarsely chopped

1 tablespoon demerara sugar or other raw sugar

Coarsely chop the peaches and puree with a handheld blender or in a food processor until smooth. Add the orange juice and blend again.

Process the tofu with a handheld blender or in a food processor until smooth. Stir in the maple syrup.

Place alternate tablespoonfuls of the fruit puree and tofu mixture into four tall stemmed glasses or individual dishes, swirling lightly to create a marbled effect.

Mix together the walnuts and sugar, then spoon on top of the peach purees just before serving.
