Makes 1 cup
This recipe will result in a sesame butter that is similar to commercial tahini. Soaking the sesame seeds will soften them and make a smoother butter.
1/2 cup sesame seeds (soaked 4 hours or overnight)
1 tablespoon olive oil
1/8 teaspoon salt (optional)
1/2 cup warm water, as needed
Drain the sesame seeds well, then transfer them to a high-speed blender or food processor and grind until smooth. Add the olive oil and salt, if using. Process until combined. With the motor running, add some of the water in a slow, steady stream and blend until smooth, adding as much of the water as needed to achieve the desired consistency. Transfer to a bowl or jar, cover tightly, and store in the refrigerator.
