Almond Butter and Orange Marmalade Pinwheels

Serves 4

Brimming with color, texture, and flavor, this no-cook appetizer is easy to assemble on a moment’s notice.

1/2 cup almond butter

2 tablespoons vegan mayonnaise

1/4 cup finely minced celery

2 tablespoons finely minced pitted black olives

1/2 cup orange marmalade

1 large carrot, grated

2 pieces lavash flatbread or flour tortillas

In a small bowl, combine the almond butter, mayonnaise, celery, and olives. Mix well and set aside.

In a separate bowl, combine the marmalade and grated carrot. Set aside.

Place one piece of the lavash on a cutting board and spread evenly with half of the almond butter mixture. Spread half of the marmalade mixture on top.

Roll up the bread and use a serrated knife to cut the roll into 1-inch pieces. Stand the pieces upright on a platter and repeat with the remaining ingredients.

Note: Soft white bread with the crusts removed may be used instead of the lavash or tortillas, if desired.

Almond butter

Mild in flavor, almond butter is ideal for both sweet and savory dishes. When the almonds start to come away from the sides of the food processor, the butter is ready.
