Instead of baking these flavorful and nutritious bites, you can fry them in a skillet in a little oil. They can be enjoyed as a main dish, an appetizer, or in a sandwich. Use gluten-free oats to make this gluten-free.
Gluten-Free Option
Almond-Quinoa Balls:
3/4 cup cooked quinoa
1/2 cup old-fashioned rolled oats
1/4 cup almond butter
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups cooked or 1 (15.5-ounce) can white beans, well drained and blotted dry
Olive oil or cooking spray
Fire Sauce:
2 tablespoons almond butter
2 tablespoons Asian sweet chili sauce
2 tablespoons sriracha sauce
1 tablespoon vegan mayonnaise
Almond-Quinoa Balls: Preheat the oven to 350°F. Lightly oil a baking sheet or spray it with cooking spray and set aside.
In a food processor, combine the cooked quinoa, oats, almond butter, and salt and pepper and process until well mixed. Add the white beans and pulse until you have a stiff mixture. Roll into 1 1/2-inch balls and arrange on the prepared baking sheet. Bake for 30 minutes or until golden brown.
Fire Sauce: Combine all the sauce ingredients in a bowl or blender and stir or process to blend thoroughly.
To serve: Either combine the balls and fire sauce in a bowl and toss gently to coat, or transfer the balls to a shallow bowl and drizzle the sauce on top.
