1/4 cup peanut butter
4 slices large ripe tomato
Salt and ground black pepper
Preheat the broiler. Spread the cut sides of the muffins with the peanut butter and place cut side up on a baking sheet.
Top each muffin half with a tomato slice and season with salt and pepper to taste. Place under the broiler until hot and lightly browned, about 2 minutes. Serve at once.
