Cashew butter adds richness and protein to this tropical smoothie. Smoothies are a great way to use bananas that are beginning to get too ripe. Just peel, cut into chunks, and store in the freezer. That way, you can have cold, rich smoothies at a moment’s notice.

1 large ripe banana, cut into chunks and frozen
1/2 cup fresh or canned pineapple chunks
3/4 cup coconut milk
2 tablespoons cashew butter
1 teaspoon vanilla extract
3 to 4 ice cubes
In a blender, combine the banana, pineapple, coconut milk, cashew butter, vanilla, and ice cubes. Blend until smooth. Serve immediately.
