Apple-Almond Butter Crumble

Try this homey dessert the next time you’re in the mood for apple pie but don’t want the labor of a pie crust. To make this gluten-free, use gluten-free flour and oats; for soy-free, use soy-free vegan butter.

3/4 cup natural sugar, divided

1/2 cup old-fashioned rolled oats

1/4 cup all-purpose flour

1/4 cup almond butter

2 tablespoons vegan butter

1 teaspoon cinnamon, divided

4 large Granny Smith or other cooking apples

1 tablespoon fresh lemon juice

1/4 teaspoon allspice

1 tablespoon cornstarch

In small bowl, combine 1/4 cup of the sugar, the oats, flour, almond butter, butter, and 1/2 teaspoon of the cinnamon. Use a pastry blender to mix until crumbly. Set aside.

Preheat the oven to 375°F. Peel, core, and thinly slice the apples and place them in a large bowl. Add the lemon juice, allspice, cornstarch, and the remaining 1/2 cup sugar, and 1/2 teaspoon cinnamon. Stir to mix well, then spoon the apple mixture into a shallow baking dish or 10-inch deep-dish pie plate. Sprinkle the reserved topping evenly over the apples.

Bake until the apples are tender and the topping is golden brown, about 45 minutes. Serve warm or at room temperature.
