1 large ripe banana, peeled
1/3 cup nut butter of choice
1 teaspoon vanilla extract
4 ounces semisweet vegan chocolate
3/4 cup natural sugar
1/4 cup vegan butter
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 cup chopped roasted nuts of choice (one type or a combination)
Preheat the oven to 350°F. Lightly grease the bottom only of an 8-inch square baking pan. Set aside.
In a blender or food processor, combine the banana, nut butter, and vanilla, and puree until smooth. Set aside.
Place the chocolate in a small heatproof bowl and melt over a small saucepan of simmering water, stirring occasionally, until melted. Keep warm over very low heat.
In a medium bowl, combine the sugar and butter and beat until well blended. Beat in the reserved banana mixture and blend well. Add the flour and baking powder and beat until combined.
Spoon the batter into the prepared pan, then swirl in the reserved chocolate to create a marbled effect. Sprinkle the nuts on top.
Bake until the top springs back when touched, about 30 minutes. Cool completely in the pan before cutting.
