MIAMI APPLE AND FETA SALAD

Serves 2 to 4, Vegetarian/Gluten-Free

INGREDIENTS

2 cups romaine lettuce, torn

2 cups red leaf lettuce, torn

1 medium Fuji apple, chopped

1/2 cup dried cranberries

1 tomato, chopped

Optional: 1 red onion, chopped

 

DRESSING

3 tablespoons olive oil

1 1/2 tablespoons white wine vinegar

1/4 cup fresh lemon juice

1/8 teaspoon pepper

1/8 teaspoon sea salt

 

TOPPING

1/2 cup walnuts, halved

1 cup feta, crumbled

PREPARATION

In a large bowl, combine salad ingredients, add dressing, and toss.

Sprinkle walnuts and feta cheese on top.
