Stout GingerBread
Yields 1 loaf, Vegetarian
INGREDIENTS
1 1/4 sticks of butter, or substitute 1 teaspoon Ziggy Marley’s Coco’Mon Coconut Oil
1 cup (packed) dark brown sugar
1 cup stout beer, like Guinness
3 teaspoons ground ginger
1 tablespoon fresh ginger, peeled and grated
2 teaspoons cinnamon
1/4 teaspoon cloves, ground
1/2 cup molasses
1/2 cup golden syrup
2 cups all-purpose flour
2 teaspoons baking soda
2 eggs
1 1/4 cups sour cream
PREPARATION
Preheat oven to 325°F.
On low heat, mix the following in a saucepan: butter, sugar, stout, ground ginger, fresh ginger, cinnamon, ground cloves, molasses, and golden syrup.
Remove from heat and whisk in flour and baking soda till lumps have disappeared.
In a bowl, whisk eggs and sour cream.
Add egg mixture to the gingerbread mixture and whisk till smooth.
Add mixture to a greased loaf pan and bake for about 45 minutes, testing with a toothpick at 35 minutes for doneness.

in there, you know? That’s what the Guinness is for,
because I don’t have no real need to drink beer.
My body does not ask me for beer. But when
the gingerbread is asking for the stout, that’s another story.”
