The Ingredients
2 cups water
2 black tea bags
½ cup rum
2 ounces Triple Sec
2 tablespoons sugar
8 lemon slices
The Directions
Use a 2-quart slow cooker. Put the water into the slow cooker and add the tea bags. Pour in the rum and Triple Sec, and stir in the sugar. Float the lemon slices on top. Cover and cook on low for 4 hours, or on high for about 2 hours. Squeeze out the tea bags and discard before serving.
The Verdict
Thank you to Barbara for this recipe! She serves it for her book club (and now I’m thinking my book club is rather boring). This is some Very. Powerful. Punch. I shared it with some friends, who really liked it a lot.
serves 4
The Ingredients
3 cups strong black coffee
⅔ cup dark rum
2 tablespoons sugar
2 teaspoons coconut extract
whipped cream as garnish (optional)
The Directions
Use a 2-quart slow cooker. Stir the coffee, rum, sugar, and extract together in the cooker. Cover and cook on low for 4 hours, or on high for about 2 hours. Ladle into mugs and top with whipped cream, if desired. This is an excellent after-dinner drink.
The Verdict
You will feel cozy drinking this coffee. You can tell the rum is in there, but it balances nicely with the coffee and coconut. This would be lovely to drink outdoors around a campfire, or indoors huddled around a wood-burning stove on a stormy night. Or you can just plug in your slow cooker on the kitchen countertop on a boring Wednesday evening to liven up your week.
