The Ingredients
aluminum foil
4 catfish fillets
1 tablespoon Italian seasoning
½ teaspoon kosher salt
¼ teaspoon ground black pepper
1 red bell pepper, seeded and sliced
1 green bell pepper, seeded and sliced
1 small yellow onion, peeled and sliced in rings
2 tablespoons butter, cut in thin strips
The Directions
Use a 6-quart slow cooker. Lay a length of foil out on your kitchen countertop. Place the fish fillets in the center. Sprinkle on the Italian seasoning, salt, and pepper. Add the peppers and onion. Arrange the slices of butter on top of the vegetables. Fold the foil over and crimp the sides to make a packet. Place in an empty slow cooker (do not add water) and cover. Cook for 2 hours on high, or until the fish flakes easily with a fork.

⅛ teaspoon black pepper
½ teaspoon dried minced parsley
2 garlic cloves, minced
The Directions
Use a 4-quart slow cooker. Spread a length of foil out on your countertop, and place the fish in the middle. In a small bowl, combine the butter, lime juice, salt, pepper, parsley, and garlic. Brush the butter and lime mixture on the fish with a pastry brush. Fold the foil over and crimp the sides to create an enclosed packet. Place the packet into an empty slow cooker and cover. Cook on high for 2 hours, or until the fish flakes easily with a fork.
The Verdict
We eat a lot of salmon, and I’m so glad to have another way to season it. This has a nice mild citrus flavor with a hint of buttery goodness. Yum. Serve with fresh veggies and rice or potatoes.
