Breakfast, why do I love you so? Is it because you offer an endless variety of sweet and savory combinations? Or because you’re the only meal versatile enough to eat any time of day? As a kid, I adored all kinds of breakfast foods—most of all, and I mean this wholeheartedly, poached eggs on toast. That shaggy, overcooked, wet mess plopped on top of generously buttered Wonder Bread toast was pure comfort to me, and I’m not ashamed one bit.
Today, for my Mad Genius Tips video series, I come up with lots of crazy-smart ways to poach eggs, such as cooking a dozen at the same time in the cups of a muffin tin. But at home I more often go the traditional route. It’s all good, as long as I’m bringing back the flavors of my childhood. Breakfasts and brunch in particular bring back memories of my youth, whether I’m making spicy avocado toasts topped with a poached egg or my blueberry sticky buns.
